Quiche Lady, Tell Me More!

So without further ado, today’s special on the menu is our Spinach and Bacon Quiche. Abracadabra -This gluten-free quiche is so incredibly easy to make you will find yourself making it every week!

Our gluten-free quiche recipe has the perfect grain-free buttery, light, and flaky crust. True perfection coming from the almond flour, and arrowroot starch. I have tested this recipe with tapioca starch and potato starch. So if you happen to have those on hand, feel free to swap it. We actually melted the butter for this pie crust, and not only does it make a delicious quiche crust, but it’s a HUGE time saver!

We loaded this baby up with spinach, bacon, sundried tomatoes, and thyme – So much flavor your taste buds can’t contain. This healthy recipe is perfect for breakfast, brunch, or dinner, and is packed with lots of protein and good carbs. Natalie Way Bakes Spinach and Bacon Quiche is a savory meal waiting to happen!

Dairy-Free Me

Yes indeed this recipe is dairy-free. We used nutritional yeast in this dairy-free quiche to give it a nice light cheesy flavor. You will love it!

Ingredients to make Spinach and Bacon Quiche

  • 3/4 cup cooked and chopped bacon – no hormones / no nitrates ( round up to 1 cup for an even heartier texture )
  • 8cage free eggs
  • 3/4 cupunsweetened cashew milk ( I usesilk brand)
  • 3 tbsp. nutritional yeast
  • 1 cupchopped fresh spinach
  • 1/3 cupjulienne cut sun dried tomatoes in a jar( this brand is certified gluten-free )
  • 1/2onion chopped
  • 2cloves minced garlic
  • 4sprigs thyme ( leaves only not stem )
  • 1 tsp. salt ( add more if desired )
  • 1/2 tsp. pepper ( add more if desired )

Grain-Free Quiche Crust

  • 2 1/2 cupsfinely ground Almond Flour
  • 1 cupArrowroot starch ( potato or tapioca are fine too )
  • 1egg
  • 1stick melted Earth Balance Butter ( salted )

Spinach and Bacon Quiche { Grain-Free + Dairy-Free }

Ingredients

  • 3/4 cup unsweetened cashew milk ( I use silk brand )
  • 3 tbsp. nutritional yeast
  • 1 cup chopped fresh spinach
  • 1/3 cup julienne cut sun dried tomatoes in a jar ( this brand is certified gluten-free )
  • 1/2 onion chopped
  • 2 cloves minced garlic
  • 4 sprigs thyme ( leaves only not stem )
  • 1 tsp. salt ( add more if desired )
  • 1/2 tsp. pepper ( add more if desired )

Grain-Free Quiche Crust

  • 2 1/2 cups finely ground Almond Flour
  • 1 cup Arrowroot starch ( potato or tapioca are fine too )
  • 1 egg
  • 1 stick melted Earth Balance Butter ( salted )

Instructions

  1. Preheat oven to 350 degrees.
  2. Starting with your quiche crust first, combine almond flour, and arrowroot starch.
  3. Add in melted butter and mix.
  4. Now add in your egg and mix again, you should have a nice soft dough.
  5. In a tart pan or pie pan, press dough into the bottom and sides of the pan. ( set aside )

For The Gluten Free Quiche

  1. Add oil to a skillet over medium-high heat. Add onion, garlic, and thyme. Cook until onion is translucent. ( approx. 5 to 7 minutes )
  2. Add in chopped spinach and cook until spinach is cooked down. ( approx. 3 to 4 minutes )
  3. Next add in sun dried tomatoes, salt, and pepper.
  4. Remove from heat and set aside.
  5. In a medium bowl whisk together eggs, milk, and yeast.
  6. Next scatter cooked veggies and bacon over the bottom of your pie crust.
  7. Pour egg mixture over the top of your veggies.
  8. Line the edges of your pie crust with foil to protect the pie crust from burning.
  9. Place quiche in the oven and bake approximately 40 minutes. ( oven temperatures may vary so be sure to check your quiche 5 to 10 minutes before projected bake time )
  10. Once done baking let quiche cool and rest for at least 10 to 15 minutes before slicing.
