This low carb quiche is so easy to make and the flavors so amazing no one will even realize it is a keto quiche! They will just eat some and then ask for seconds!

Crustless quiche is a great recipe to make when you are meal planning. It works well as a breakfast food and as a dinner meal. If you are looking for an amazing crustless spinach quiche you have found it. This low carb crustless quiche is so easy to make and then store for easy breakfasts during the week. I like to make 2 crustless quiches and have them for easy breakfasts for a few days.

Is a Frittata the same as a crustless Quiche?

No. A frittata is mostly egg and started on the stove like an omelette and then put in the oven to finish cooking. A crustless quiche is mixed in a bowl and the ingredients poured into a pie pan and then baked in the oven.

Tips for Making a Crustless Quiche

Grease the pie dish well. Be sure to grease the pie pan well with nonstick cooking spray. Not doing so will make it so the cooked quiche sticks to the pie pan when you go to remove it and serve.

Use fresh veggies. Using frozen veggies will add more water to the quiche and make watery.

Shred your own cheese. Shredded cheese is great for convince but it is coated to make it not stick together when in the package. Shredding your own cheese is easy and is the best way to go for shredded cheese.

Variations of Keto Quiche

Change up the veggies. Not a fan of spinach or mushrooms? You can change up the veggies to ones you love. Bell peppers, zucchini, onions and broccoli are great options.

Add meat. If you want to add meat like ground chicken, ground turkey, chopped ham or bacon you can. Just keep it at about 1 cup of meat and cook it before adding it to the quiche.

Change up the cheese. I use cheddar but you can use other types of cheese as well, Monterey jack, white cheddar, Cheddar Jack, and Mexican blend are all options that will work well.

If you have leftovers of this Crustless Spinach and Mushroom Quiche allow it to cool completetly and then cover with plastic wrap in the pie pan or in an airtight container. It will keep for 3-4 days in the fridge.

Yes! If you want to make this low carb quiche ahead of time and freeze you definitely can, but you do need to bake it before freezing it. If you are going to be freezing the whole spinach and mushroom quiche I suggest making and baking it in a tin foil pan. When you want to serve it thaw in the fridge over night and then bake at 350ºF for about 20 minutes.

Preheat the oven to 350ºF.

Wash the veggies and chop the mushrooms and spinach.

Whisk the eggs and heavy cream together in a medium bowl.

Stir in the mushrooms, spinach, garlic, salt, and pepper to the eggs.

Pour in a 9 inch well-greased pie pan.

Bake for 40-45 minutes until the middle is cooked.

  • 1/4 cup heavy cream
  • 1 cup mushrooms chopped
  • 1 cup spinach chopped
  • 1 cup cheddar cheese shredded
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt to taste
